Fish Poached in Tomato Sauce

1/4 cup garlic, chopped
1/4 cup ginger, chopped
1 onion, chopped
1 28oz can whole tomatoes
1.5 lb basa fillets, cubed
1 bunch basil, de-stemmed, loosely chopped

Saute the garlic, ginger and onion until they start to brown, then pour in the can of tomatoes, with juice. Use a spatula to break up the tomatoes, and bring to a boil.

Reduce the temperature to a simmer, then add the fish. Adjust temperature so that the mixture will poach the fish (just below simmer). Stir occassionally until the fish is done, in about 15 minutes.

Scoop out the fish into serving dish, then turn up heat to boil and reduce remaining tomato mixture for 10 minutes for the sauce. Pour this over the fish, add the basil and mix. Serve over rice.
